Smothered Sweet Potatoes

This dish is full of nutrients, fiber and protein, making it a satisfying all-in-one meal.  I think of it as a variation on chili stuffed baked potatoes.

Smothered Sweet Potatoes

2 1/2 cup cooked black beans

3 cups collard or other greens, chopped

3 baked sweet potatoes (look for organic sweet potatoes so you can eat the skin)

5 cloves garlic, crushed or minced

1 yellow onion, chopped

1 pound ground turkey, white or dark, or a mixture of both

1 tbl olive oil

1 tbl whole cumin seed

1 tbl Apple Cider Vingar

Salt to taste

chili pepper, to taste, optional

hot sauce to serve, optional

1. Preheat oven to 425 degrees.  Scrub raw sweet potatoes and prick skin with fork.  Wrap in foil and bake for 45-60 minutes.

2. Add olive oil to pan and heat on medium.  Saute onions, garlic and cumin seeds, making sure not to burn garlic.  Add ground turkey meat and brown until cooked through.  Add black beans and other seasonings.  Add collard greens last and cook until just tender, do not overcook.

3. Remove sweet potatoes from oven and unwrap from foil.  Cut potato in half and spoon greens, turkey and bean mixture over top.  Serve with hot sauce if desired.

    Kendra, I saved your blog as a favorite place, as I’m always looking for yummy, healthy meals to make. I’m planning on making this one soon (bought the sweet potatoes today)! Also, have I told you how much I love that delicata, black-eyed pea, kale, and tomato soup recipe you sent me forever ago in your first blog? I’ve made it several times and Rob has raved about it.
